Did you buy a whole watermelon and discover the kids are tired of eating it? Or maybe you’re having pregnancy cravings and you bought a watermelon bigger than your baby bump? Now you have half a watermelon and you’re worried it’ll just rot.
I’ve got a delicious solution.
Water-Lemon Refresher!
(single serving size)
1.5 C frozen water-lemon cubes1 C cold water
1 TBSP lemon juice (or the juice of 1/2 lemon)
1 TBSP sugar (more or less depending on how sweet the watermelon is)
Prep: Slice your leftover watermelon. Cut off the rind and cube fruit. Put cubes into a zippered freezer bag. Leave overnight to solidify. When frozen break off enough cubes to make your drink.
Instructions: Put all ingredients in a bullet blender (double or triple amounts for full size blender) and blend until smooth. Serve with a straw!
My kids won’t eat watermelon on the rind for some reason but they love anything made into a fancy drink!
